Ultimate One-Cup-Only Eggnog

It is a mistake made every Christmas: The holiday partygoer, seduced by the mellifluous texture and rich flavor of homemade eggnog, decides: It's okay to have a second cup. And lo, the body reacts just as it should to a greater-than-six-ounce serving of raw eggs, sugar, rum and heavy cream. Drinking eggnog is just about the greatest challenge one can pose to the stomach. So if you're willing to take the gastronomic risk, you might as well drink the best. According to Debra Ponzek, executive chef at the terrific Manhattan restaurant Montrachet, perfect eggnog is made with the ingredients below.
  • 12 egg yolks
  • 1 3/4 c sugar
  • 2 quarts heavy cream
  • 2 t cinnamon
  • 2 t nutmeg
  • 1 t clove
  • 1/2 c rum
  • 1/2 c cognac
  1. Mix the egg yolks and sugar in a large bowl until pale. Then stir in the other ingredients, chill, and serve.
